As a kid I was introduced to creamed corn at a friend’s house. I am a corn lover anyway so a new, creamier way to eat corn excited me. Upon returning home I told my mom about my new found favorite side dish. She agreed to get some. A few night’s later my mom served us canned cream corn, much to my father’s disdain. You see, my dad connected creamed corn with his appendicitis. Actually, not creamed corn but corn chowder but he said they were all the same. On the night of his appendicitis attack he had eaten corn chowder. Of course, the food and the medical issue were in no way connected but, in my father’s mind they were. Mom didn’t serve us creamed corn very often because none of us wanted to hear dad re-tell his story.
I do remember the one thing I didn’t like about some creamed corn was that is was mostly pulverized corn, which made the dish mushy. While I was looking for some new corn recipes on Pinterest I was happy to see a lot of recipes using whole kernels not pulverized corn. I created this smooth and creamy crockpot creamed corn recipe based on several similar recipes I found in my search.
I made this recipe to go with pork chops the other night and it was easy to make, it’s a dump recipe. It was smooth and creamy too. If you are looking for an easy updated creamed corn recipe, look no further, you’ve found it.
- 36 oz frozen loose corn
- 8 oz cream cheese
- 1 stick butter
- 1/2 cup milk
- 1/2 tsp pepper
- 1 tsp salt
- 1 TBS sugar
- Place all ingredients in the crockpot.
- Cover.
- Cook on high for 3 hours., stirring once each hour.
