So, I never got around to meal planning for April <gasp>! My meal plans always include the new recipes that I want to share here on the blog so, this week I was at a loss. I looked through my pantry and freezer to see what I had on hand and then I searched Pinterest for recipes. I came up with an super easy, new family favorite. This Caramelized Italian Dressing Chicken recipe only has 3 ingredients and they are all pantry staples. I hope you like it as much as we did.
- 1 packet dry Italian Dressing Mix I use Good Seasons
- 1/2 cup brown sugar
- 1 lb boneless skinless chicken breasts
- Preheat oven to 350°
- Line a 13x9" pan with aluminum foil. Spray foil with non-stick spray.
- Trim fat from chicken and pound breasts to 1/2" thickness.
- In a quart size zippy bag pour brown sugar and Italian Dressing mix.
- Seal bag and mix well.
- Rinse chicken under running water, one piece at a time and then place in the bag.
- Seal bag and shake until chicken is well coated.
- Place chicken in pan.
- Repeat until all chicken is coated.
- Pour remaining sugar mixture on top of chicken in pan.
- Bake a 350° for 15 minutes.
- Flip chicken over.
- Bake for another 15 minutes.
- Then change to broil-broil for 2 minutes.
- Flip chicken over.
- Broil for 2 more minutes.
- Spoon additional sauce over chicken when serving.
Serve with rice and a vegetable.
This recipe was so easy and both my husband and I really liked it. It has great flavor and texture. He said to make sure this is a regular on the meal plan…I guess I need to get May’s meal plan done!
