I love French Fries but we are trying to eat healthier so we are cutting back on fried foods, especially at home. This means making baked fries whenever possible. In the past, I have tried 2 different mandolines and they were either bulky or not sharp enough to cut the potatoes. We always end up just cutting them with a knife. Recently I received a Surpahs V-Blade Mandoline to try. I was skeptical because we hadn’t had success in the past but I am always willing to try something new.
While I was preparing the other parts of our meal, hubby took to slicing the potatoes using the wavy blade. We learned a few things very quickly: 1. cut the potato into halves or thirds before putting on the mandoline, if it is too big the safety guard can’s slide in its groove. 2. The blades are SHARP. We almost had to take hubby to get stitches. His large piece of potato stopped sliding on the blade, (he was using the hand guard), his hand slipped of the hand guard and kept moving. OUCH! Yes, there is a safety and a learning curve with this appliance but it works great. I would NEVER let children use this tool. After using this mandoline slicer, I threw my other 2 away!

- 3-4 russett potatoes
- 3 TBS olive oil
- 1 TBS salt
- pinch cayenne pepper
- pinch black pepper
- Preheat oven to 400°.
- Spray a baking pan with nonstick spray and set aside.
- Carefully slice the potatoes using the wavy blade on your mandoline. (you may use a knife if you don't have a mandoline)
- In a small bowl mix together the oil, salt, cayenne, and pepper.
- Toss in the potato slices to coat well.
- In a single layer, place the potato slices on the prepared baking sheet.
- Bake for 25-30 minutes, until crispy.
