I know some of you are thinking, “A crockpot recipe is summer?” The answer is “YES!” Here in Florida we have been in the 90s for about 2 weeks. The other night the TV meteorologist said we should be in the 90s til September 9th! Ugh! That is 3 months of crazy heat and humidity. I’ve been craving chicken and rice but I am trying to not use my oven in the heat of the day, since the afternoon summer rains haven’t kicked in yet. It was time to try and make Chicken and Rice in the crockpot.
I love this recipe because it can cook for 8 hours on high or 4 hours on low. This was a morning of decision and I didn’t have all the ingredients on hand so that meant Ron would be making a trip to the grocery store. Since I knew I could cook this in 4 hours I just told him I needed the ingredients by 1:15pm so we could be done eating dinner before I headed out to my weekly trivia night with friends.
Crockpot recipes also make cleanup easier on busy nights because of these amazing crockpot bags. Have you ever used them? I have been cooking in a crockpot for over 30 years and I just learned about this amazing invention 2 years ago! Pop a bag in the crockpot before adding your ingredients and then when dinner is done and leftovers are put away, just throw away the liner and, voila, clean crockpot!
Even in the heat of summer, I crave comfort food. I adapted my chicken and rice recipe for the crockpot so I don't have to heat up the house with my oven.
- 2 lbs boneless, skinless chicken breasts
- salt and pepper
- 2 cans cream of chicken soup cans
- 1 3/4 cups milk
- 1 pkg Lipton Savory Herb & Garlic Recipe Soup Mix
- 1 cup regular long grain rice
- 1/2 cup grated paremsan cheese
Place the crockpot liner (optional) in the crockpot.
Cut the chicken into approximately 1" cubes.
Place the chicken in the bottom of the crockpot. season with salt and pepper.
In a large bowl, mix together the cream of chicken soup, milk, soup mix, and rice. Stir until combined.
Pour the milk mixture over the chicken.
Sprinkle the Parmesan cheese over the soup mix.
Cook on High for 4 hours or on low for 8 hours.
Stir well before serving.
Yum! This recipe was such a hit we all went back for seconds and we had just a small serving of leftovers for lunch later in the week. The Parmesan flavor takes this recipe to the next level over other chicken and rice dishes I have eaten.
