I have waited an entire year to share this recipe with you! I made these cookies for Christmas last year but by the time I got around to writing this post it was the end of January so I decided to wait until we were back in the holiday season. Now, you might be looking at the title of this post and thinking, “Cindy, Have you lost it?” No, I haven’t lost it. These cookies are delicious and were the favorites of everyone we shared cookies with but…they are ugly. So, going along with the ugly Christmas sweater craze we decided to call these Ugly Christmas Cookies 🙂
These cookies are a delicious combination of peppermint, Oreos, and dark chocolate chips. To make my cookie making go a bit easier last year, I picked up a cookie scoop, boy did it make a big difference! This recipe makes about 36 cookies and on the same day we made Hot Cocoa Cookies, and Snickerdoodles too.
- 1 box white cake mix
- 1 egg
- 1 stick butter melted
- 1/2 tsp vanilla extract
- 1/2 tsp vanilla extract
- 4 oz cream cheese softened
- 1 cup Oreo cookies chopped into small chunks
- 1 cup Andes Peppermint Crunch pieces
- 1/2 cup dark chocolate chips
- In a large bowl beat together the cake mix, egg, butter, peppermint extract, and vanilla extract, until a soft dough forms.
- Add in the cream cheese and beat until combined.
- Stir in by hand the Andes Peppermint Crunch , then the chocolate chips, and then the cookie pieces until all are mixed in.
- Refrigerate the dough for at least 30 minutes.
- Preheat the oven to 350°.
- Roll the dough into 36 balls.
- Bake the cookies on a cookie sheet for 9 minutes, don't over bake.
- The cookies will be soft and appear undercooked. Let them sit on the hot cookie sheet for about 2 minutes and then remove them with a spatula to a piece of wax paper.
- Gently tap the tops of the cookies with the spatula to even out the tops.
- Cool completely.
- Store in an airtight container.
We usually do the bulk of our baking on Christmas Adam (the day before Christmas Eve), but you could make these a few days earlier they keep fresh for a while.
