Often there are leftover bananas at the end of the work week in Phone Central. It has become a regular occurrence that I bring those bananas home and bake something with them and bring those baked goods back with me the next week. Well, this time we had the week off so I brought my concoction to Wednesday night church instead. Since a loaf of banana bread wouldn’t feed enough people, and I only had 3 leftover bananas, I made a banana cake instead. I decided bananas and caramel pair well together so I turned it into a Caramel Banana Poke Cake.
- 3 bananas sliced
- 4 eggs
- 1/2 cup butter softened
- 1 1/2 cups sugar
- 1 cup sour cream
- 2 cups flour
- 1 tsp baking soda
- 1 cup brown sugar
- 1/2 cup butter
- 1/4 cup milk
- 1 tsp vanilla extract
- Spray a 10" Bundt pan with nonstick spray.
- Preheat oven to 350°.
- In a large bowl cream together the butter and sugar.
- Beat in the eggs one at a time.
- Add in the bananas, sour cream, and baking soda; beat until smooth.
- Mix in the flour.
- Pour batter into prepared pan.
- Bake for 60 minutes-until toothpick comes out clean.
- Cool in pan for 10 minutes, then remove from pan and place on wire rack over a baking sheet.
- Using a skewer, poke holes around the top of the cake, going at least halfway down.
- Pour the caramel sauce over the top of the cake and into the holes.
- Allow the sauce to also drip down the sides of the cake.
- Cool completely and serve.
- In a sauce pan mix together the brown sugar, milk, and butter.
- Bring to a gentle boil and cook until thickened.
- Remove from heat and stir in vanilla extract.
- Immediately pour over cake as instructed above.
The cake was a huge hit both with the girls in my class, my fellow teachers, and some friends who stopped by my class for a slice after church. This cake was moist and flavorful and the caramel isn’t overpowering. I hope you enjoy this recipe and all of the easy recipes I share here on The Mom Maven.
