Mom Maven’s Thoughts on Stock the Crock
There are so many recipes in Stock the Crock that I can’t wait to try. I am especially looking forward to Peppery Turkey Tenderloin with Apples, which I want to make for Thanksgiving except that Jordan doesn’t like turkey…or cooked apples. I guess that one will have to wait for some time when he isn’t home. Anyway, I love that this beautiful cookbook is full of amazing photographs, easy-to-understand recipes and variations for many dietary needs. In the introduction Good encourages users to write in this book, make notes about variations the user tries and even rate the recipe for future reference. Good has been in the slow-cooker cookbook game for a long time and this new book doesn’t disappoint. This book would make a great gift. I’m thinking about pairing it with a crockpot for an upcoming bridal shower, and giving a copy to Aaron for a Christmas gift, since he does the cooking in his house.
Basic Chicken and Salsa Recipe
- 2-3 pounds boneless skinless chicken thighs
- 16 oz jar salsa
- salt and pepper to taste
- cooked rice optional I used Vigo yellow rice
- grated cheese of your choice-I used a Mexican blend
- sour cream optional
- Avocado chunks or slices optional
- fresh toppers: cherry tomatoes cut into fourths; chopped red onion; chopped green bell pepper optional
- Grease the interior of the slow cooker crock with butter or nonstick cooking spray.
- Place the chicken in the prepared crock. Spoon the salsa over the top.
- Cook on low 4-4 1/2 hours, or until instant-read meat thermometer registers 175° F when stuck in the center of the thighs. Add 1/4 cup water, or more during the cooking time if necessary.
- Place the thighs on a cutting board, one at a time. Use 2 forks to shred the chicken, stir the shredded meat and salsa together.
- Season to taste with the salt and pepper. Serve over rice topped with cheese, sour cream, avocado, cherry tomatoes, red onion, and green pepper, if desired.
