When it comes to banana bread I have been a one trick pony my whole life. I grew up eating and baking Mimi’s Banana Bread. Occasionally I have tried other recipes but none has compared to my mom’s recipe. A few weeks ago we had some leftover ripe bananas at the radio station. I offered to bring them home and bake something with them to bring in the next week. I search for a new twist on banana bread, and I found a few. I decided to try the Peanut Butter Banana Bread recipe from Real Mom Kitchen.
I love peanut butter and banana together, I like it in my sandwiches and in my smoothies. I decided it would work as a sweet bread too so I whipped up a batch and brought it to work. The peanut butter banana bread got rave reviews. Some people thought it needed more peanut butter, and I agree with that assessment. In the recipe I give a range for how much peanut butter should be in the recipe, taste your batter and decide for yourself. I was told by one friend that Elvis would approve of the recipe…so there’s that.

- 1/3 cup butter
- 4-6 TBS Skippy Smooth Peanut Butter
- 3 large ripe bananas
- 3/4 cup sugar
- 1/4 cup light brown sugar
- 1 egg beaten
- 1 tsp vanilla
- 1 1/2 cups flour
- 1 tsp baking soda
- 1/8 tsp salt
- Preheat oven to 350°.
- Spray a loaf pan with non-stick spray.
- In a microwave safe bowl, place the peanut butter and the butter. Microwave for 20-30 seconds to melt.
- In a large mixing bowl with a fork, mash the bananas. Use a wooden spoon to mix in the peanut butter mixture.
- Next, add the white and brown sugars, the egg and vanilla. Stir until well mixed.
- Add in the flour, baking soda and salt and stir just until combines, do not over mix.
- Pour the batter into the loaf pan and bake for 1 hour and until a toothpick comes out clean.
