My recipe goal for the month of April is to bring you zero pasta recipes and no more crockpot recipes. Actually the next 3 weeks will be Mexican inspired recipes to give you ideas and choices for Cinco de Mayo! I’m working hard this week to start getting ahead for the month. This weekend Ron and I are at Disney celebrating his 50th birthday! Then the week of April 18-22 I am out of the office 12+ hours a day volunteering at Phone Central for another Christian radio station fundraiser. I love the fact that being my own boss and running 4 businesses allows me the freedom to give of my time, money and talents to causes and people that I love!
Today we are making Sweet and Spicy Baked Chicken. I am going to warn you right now this dish is s-p-i-c-y! To prove my husband wasn’t really listening to me the night I made this, he took his first bite and his mouth was on fire, his eyes started watering and he had to get up and get himself a drink! I promise, I had warned he and Jordan that it was very spicy and Jordan will even corroborate my story! Jordan and I loved this dish. Ron said it was good, but I think his first bite colored his review a bit. I don’t recommend this dish for young kids because of how spicy it is. Make this for you and hubby and let the kids have chicken nuggets.
- 1 pound boneless skinless chicken breasts, pounded thin**
- 1 tsp salt
- 1 tsp pepper
- 1 tsp red pepper flakes
- 1 tsp garlic powder
- 1 tsp chili powder
- 1/2 cup honey
- Preheat the oven to 400°.
- Line a baking sheet with sides with parchment paper.
- In a small bowl mix together the salt, pepper, red pepper flakes, garlic powder and chili powder.
- Place the chicken breasts and lay them on the parchment paper. Rub them on both sides with the spice rub.
- Bake for 15 minutes.
- Remove the chicken from the oven.flip the chicken over, drizzle with honey and place back in the oven.
- Bake for 15 more minutes.
- Remove from oven and let rest 5 minutes before serving.
