One of the first things I remember baking by myself were Peanut Butter Jumble Bars. They were my go-to for junior high slumber parties, school bake sales, or weekend pool parties. I haven’t made or thought about this simple recipe in years. Until my mom passed away August 31st of this year.

I inherited my mom’s favorite cookbook and her recipe box. I have had her Banana Bread and Turkey Stuffing recipe for years. I now have her other family must-have recipe- Mimi’s Potato Salad, which I will share next summer when I’m finally brave enough to make it.

These delicious, easy to make, Peanut Butter Jumble Bars are the perfect after school or anytime treat.

One of the recipes I was surprised to find was the Peanut Butter Jumble Bars. I knew it would be one of the first recipes I made because I have so many fond memories of baking and eating these delicious treats.

Peanut Butter Jumble Bars

Ingredients

  • 1 cup butter softened
  • 1.5 cups brown sugar
  • 1 cup smooth peanut butter I use Skippy
  • 2 eggs
  • 2.5 cups flour
  • 1 tsp baking powder
  • 1 cup semi-sweet chocolate chips
  • 1.5 cups Plain M&Ms

Peanut Butter Jumble Bars Instructions

  1. Preheat oven to 350° F.
  2. Line a 9 x 13″ pan with parchment paper. Spray the parchment with non-stick spray, set aside.
  3. In a medium mixing bowl, using a large fine mesh strainer, sift together the flour and baking powder. Set aside.
  4. In a large mixing bowl, cream together the butter and brown sugar.
  5. Mix in the vanilla and peanut butter until just combined.
  6. Add the eggs, mix until creamy.
  7. Add in the dry ingredients, mix until well incorporated.
  8. Using a wooden spoon, fold in the chocolate chips and M&Ms.
  9. Scoop the batter into the pan. Using a silicone spatula to press the sticky batter into the pan evenly.
  10. Bake for 25-30 minutes, until golden brown and a toothpick comes out clean.
  11. Cool completely before cutting and serving.
  12. Store in an airtight container for up to 3 days.

I made this recipe for my Wednesday night class at church. I know none of our church kids have a peanut allergy, so it was safe to bring. The girls loved the Peanut Butter Jumble Bars. One of the moms said I was spoiling her kids. They only want fresh baked goodies at home now!
