We do a lot of marinating around here. Marinades and rubs are easy ways to add flavor to a basic cut of meat, especially a boneless skinless chicken breast or pork chop. This super simple sweet chili chicken marinade is the second easiest marinade we use, it only has 2 ingredients!
There are a lot of complicated marinade recipes out there but marinades don’t have to be complicated. I like to marinate meat anywhere from 4-24 hours, all but the last hour of that in the refrigerator. Before I put the meat in the marinade, I like to pound chicken down for more even cooking and then I use a fork to poke holes in the meat so the marinade can get inside.
I like to use my marinade as a sauce, there are two ways to do it safely.
- Boil any remaining marinade that has been in contact with raw meat for at least 2 minutes. This will kill any bacteria.
- Set aside some of the marinade, before you put it on the meat, to use as a sauce.
For this sweet chili chicken marinade recipe, I made a double recipe of the marinade and set aside the “sauce” in a ramekin to use on the rice and chicken after it was cooked.

- 2 TBS Sweet Chili Sauce
- 1 TBS Soy Sauce low sodium
- 1 lb Chicken boneless, skinless
In a quart size zippy bag measure the Sweet Chili Sauce and the Soy Sauce. Seal the bag and mix well.
Using a kitchen mallet, pound the chicken to a uniform thickness and cut into two pieces.
Place the chicken in the bag with the marinade. Seal and massage to coat.
Place bag on a plate in the refrigerator for 3-23 hours.
One hour before cooking remove from refrigerator and allow to come to room temperature.
Preheat oven to 400°F. Line a baking pan with foil for easy clean-up.
Place chicken in prepared pan and pour the marinade over the chicken.
Bake for 20-25 minutes until the internal temperature reaches 165°F.
Serve with rice and veggies.
Make a second batch of marinade to set aside and use as a sauce on your rice and chicken.
This recipe serves two but can be easily scaled to meet your family’s needs.
