One of my favorite candies is Twix. That combination of buttery shortbread, caramel, and chocolate was my go-to treat almost every afternoon my first 2 years of college. Thankfully, since then I have cut way back on my Twix consumption. Back in December when I was working the Sharathon the popular candy that week was Twix. One of my friends mentioned that she just wanted the shortbread cookie part without the chocolate and caramel and most of us thought she was crazy. This got me thinking that I needed to try and create a Twix Cookie recipe.

Ingredients
Cookie
  • 1 cup powdered sugar
  • 1 1/2 cups softened butter
  • 1 tsp vanilla extract
  • 3 cups flour
  • 1/4 tsp salt
Caramel Layer
  • 1 lb Kraft Caramels
  • 4 TBS milk
Chocolate Layer
  • 2 tsp Crisco shortening
  • 2 cups milk chocolate chips
Instructions
Cookie
  1. Preheat oven to 350°
  2. Lightly grease 2 cookie sheets.
  3. In a large bowl, cream together the sugar and butter.
  4. Add in the vanilla, flour, and salt until well mixed.
  5. Roll out the dough to 1/2" thick on a lightly floured surface.
  6. Cut out round cookies using a biscuit cutter, 2" round cookie cutter, or a glass or mason jar.
  7. Place cut out cookies on prepared cookie sheets.
  8. Bake for 15 minutes.
  9. Remove from oven, cool on pan for 5 minutes before moving them to cooling rack.
  10. Cool cookies completely.
Caramel
  1. Once the cookies are cooled, prep your double boiler for melting the caramels.
  2. Unwrap the caramels and place them in the top of your double boiler,
  3. Add milk.
  4. Stir constantly until melted.
  5. Spread caramel over the cooled cookies.
  6. Allow caramel to cool completely.
Chocolate
  1. In a medium microwave-safe bowl, place the shortening and the chocolate chips. Place the bowl in the microwave.
  2. Cook in 20 second intervals, stirring in between. Watch carefully so that it doesn't burn.
  3. Spread the chocolate over the caramel.
  4. Let cool completely.
  5. Store in an air-tight container. Do not refrigerate.
