I used to make crepes all the time for breakfast, but I haven’t made them in years. One day while hanging out on Pinterest I saw a pin for crepes and I thought, “Duh! I need to make some crepes.” I gathered my crepe recipe and ingredients and made crepes for breakfast the next morning. One thing I love about crepes is how versatile they are. They are like a French tortilla <lol>. You can fill crepes with anything savory or sweet and they are delicious. I usually make breakfast or dessert crepes. Over the years I have filled crepes with fruit, whipped cream, Nutella, fruit preserves, scrambled eggs and bacon, ice cream…the list goes on and on.

This particular day I made strawberry preserves/whipped cream and strawberry preserves/Nutella crepes for breakfast. I need to try to re-create the vanilla cream filling from the crepes at Bob Evans because that filling with fresh fruit is delicious in a crepe.

This easy-to-make crepe recipe is perfect for breakfast or dessert crepes because it is just a little sweet.

Ingredients
Crepes
  • 2 eggs
  • 2 TBS sugar
  • 1 tsp Vanilla extract
  • 1/4 tsp salt
  • 2 cups milk
  • 1 1/2 cups flour
  • 1 TBS butter melted
Fillings
  • fruit preserves
  • fruit
  • whipped cream
  • cream cheese
  • Nutella
  • chocolate sauce
  • confectioners sugar
  • whatever you want
Instructions
  1. Place the eggs, sugar, vanilla, salt, milk, flour and butter in the blender.
  2. Blend until well mixed.
  3. Refrigerate at least 45 minutes.
  4. Blend again for 30 seconds, in case there was separation while chilling.
  5. Heat a small skillet to medium-high.
  6. Melt a little butter and spread it around the pan to keep the crepe from sticking.
  7. Pour 1/4 cup cold batter into the pan and swirl pan to coat the bottom with batter.
  8. Cook 60-90 seconds.
  9. Flip the crepe over.
  10. Cook another 60-90 seconds.
  11. Remove from stove and place on plate.
  12. I stack my crepes up on one plate until I am ready to start filling.
  13. Once all crepes are cooked place a crepe on a different plate, add toppings to one side of the crepe and carefully roll it up.
  14. Top with whipped cream or confectioners sugar of desired.
