About 2 years ago, our friends introduced us to an amazing food, Boar’s Head Chipotle Gouda Cheese. OMG! Where has this cheesy deliciousness been all of my life?!? I know, it has been hiding in the deli at Publix! We won’t make burgers without this cheese and it is delicious on roast beef sandwiches too. It adds just enough kick to your food without being too hot. In my quest to find other tasty uses for this cheese I modified a recipe for Swiss Cheese Chicken to use Chipotle Gouda and WOW! Chipotle Chicken is a new favorite dish that hubby wants weekly.

This easy chicken dish is one the whole family will love.
Course: Entree
Servings: 4 servings

Ingredients
  • 4 boneless skinless chicken breasts
  • 1 can cream of chicken soup
  • 1/4 cup milk
  • 1/4 cup butter melted
  • 1/2 pkg Stove Top Stuffing-Chicken flavor
  • 4-6 sliced Boars Head Chipotle Gouda Cheese sliced medium-thick
Instructions
  1. Preheat oven to 350°
  2. Place the chicken breasts in a baking dish
  3. Place a slice of cheese on each chicken breast, covering most of the chicken
  4. In a small bowl mix the soup and the milk together
  5. Pour the soup mixture over the chicken
  6. Top with stuffing
  7. Drizzle the butter over the stuffing
  8. Bake 50 minutes or until chicken is cooked through
  9. Serve with rice or noodles and a vegetable
