Easy Skillet Chicken Cordon Bleu Recipe

This is an easy way to make a classic dish.
Course: Entree
Cuisine: French
Servings: 4

Ingredients
  • 1/2 cup Italian Seasoned Breadcrumbs
  • 1 tsp pepper
  • 1/2 tsp salt
  • 1 lb chicken tenders
  • 1 TBS butter
  • 1 TBSP olive oil
  • 8 Canadian Bacon slices cut into thin strips
  • 4-1 oz Swiss Cheese slices halved
Instructions
  1. Preheat broiler with oven rack 5 1/2 inches from heat.
  2. Combine breadcrumbs, salt and pepper in a large zippy bag.
  3. Add chicken to the bag, seal bag and shake to coat.
  4. Melt butter with oil in oven-proof skillet over medium heat.
  5. Cook chicken 3 1/2-4 minutes per side until done.
  6. Arrange Canadian Bacon strips over chicken in skillet and top each with 1 cheese slice half.
  7. Broil 2 minutes or until cheese is melted.
Recipe Notes

You can use chicken breasts cut into strips if you don't have tenders on hand.
