Last weekend we celebrated my mom’s birthday. I asked her what kind of cake she wanted and she said she didn’t want a cake, just a watermelon since she is trying to lose weight for the wedding. Well, bringing a watermelon to a birthday party just didn’t feel right to me so I searched “watermelon cake” and found several fun ideas! Hubby and I went shopping and together we created a watermelon cake.

How to Make a Watermelon “Cake”

Ingredients

  • 1 seedless watermelon
  • 1 lg tub Cool Whip Lite
  • 1 pineapple
  • 1 qt strawberries

Directions

1. Cut the ends off of the watermelon to make it flat on both ends.

2. Carefully cut the rind off of the watermelon.

3. Place a paper towel on a large plate. Set the watermelon on the paper towel and place in the freezer for 30-45 minutes.

4. Remove the watermelon from the freezer and cover with Cool Whip Lite. If the Cool Whip starts to drip put the watermelon back in the freezer for 15 minutes then continue frosting.

5. After the watermelon is frosted, return it to the freezer for 30 minutes.

6. While the Cool Whip is thickening in the freezer, cut up your pineapple and strawberries.

7. Decorate your “cake” as desired. Slice like a regular cake and serve cold.

8. Store the watermelon in the refrigerator.

    This is definitely a unique way of eating watermelon. It looks really good though. It’s definitely a healthy alternative to the traditional cake.
