Today’s recipe for Sweet and Spicy Chicken comes from the eMeals Classic Plan. eMeals makes meal planning simple.

Sweet and Spicy Chicken

Ingredients

1 cup strawberry jam
1/2 cup vinegar
1 tsp chipotle chili powder
1 1/2 lb boneless chicken tenders

Instructions

Combine jam, vinegar, and chili powder in a blender. Mix until smooth.

Marinade-Sweet and Spicy Chicken-TheMomMaven.com

Put chicken in a large zippy bag.
Pour the jam mixture over the top, reserving half a cup.
Seal bag and marinate in the refrigerator 2-4 hours.
Remove chicken from marinade.
Discard marinade.
Grill chicken over medium heat 8-10 minutes per side. Basting with reserved marinade.

We enjoyed this recipe with Four Cheese Potatoes and Mixed Vegetables, eMeals suggests serving with Macaroni and Cheese and Orange Broccoli. We enjoyed the meal and this recipe will join the meal planning rotation.

    This is one of those recipes that you can make without going to the store. Because one would usually have the ingredients at home. Will need to try this soon.

    Looks yummy…but in step 6 you say to discard the marinade and in step 7 you say to baste with the reserved marinade…oops 😉
