I needed an easy dessert recipe for small group a few weeks ago. I started looking through some of the recipe magazines I have reviewed for something summer-y. I came across a recipe for an ice cream sandwich cake-which was rather complicated BUT that reminded me of the cake I used to make a few years ago. I searched my blog and realized I had never shared this easy summer recipe with you.

Recipe: Ice Cream Sandwich Cake

Ingredients
  • 1/2 cup Hot Fudge Sauce-warmed
  • 1 cup Cool Whip-defrosted
  • 8 oz Cool Whip-defrosted
  • 12 Ice Cream Sandwiches
  • 2 feet of aluminum foil
Instructions
  1. Mix 1 cup Cool Whip with Hot Fudge to make filling.
  2. Remove the wrappers from the ice cream sandwiches and set on a plate.
  3. Lay the aluminum foil on the counter and lay 4 ice cream sandwiches side-by-side in the middle of the foil.
  4. Spread 1/2 of the filling over the ice cream sandwiches.
  5. Stack 4 more ice cream sandwiches on top of the filling.
  6. Spread the rest of the filling on top of the second layer.
  7. Add the third layer of ice cream sandwiches.
  8. Using the 8oz of Cool Whip, frost the cake on all sides.
  9. Tightly wrap the cake in the foil.
  10. Freeze for at least 4 hours.
  11. Slice and enjoy!
Recipe Notes

To make it more festive you could top with colored sprinkles.

    I LOVE this! My daughter begs me every year for an ice cream birthday cake and I’m just not talented enough to do the whole complicated ice cream cake recipes that I’ve seen around but THIS I can certainly do! You will have made a little girl VERY happy come October:)

    This looks so good and easy, too. My sister-in-law makes an ice cream sandwich cake that is sort of like this but it has chopped up candy bars (like butterfingers or snickers) on the top. She also makes hers in a 9×13 pan. Pinning this so I have the recipe – I think my kids will love it.
