Grilled and Chilled Florida Watermelon with Feta and Mint is a perfect addition to any spring or summer party. This recipe is from the Fresh from Florida website.

Ingredients

  • 1 small Florida watermelon about 6 pounds
  • 1/2 cup small mint leaves hand torn
  • 2 oz Feta cheese crumbled
  • 1 TBS olive oil
  • 1 TBS balsamic vinegar
  • sea salt to taste
  • black pepper to taste

Instructions

  1. Slice watermelon into 1 inch thick slices.

  2. Heat a grill or grill pan over high heat until very hot.

  3. Two at a time, grill watermelon rounds about 2-3 minutes on each side until charred.

  4. Transfer watermelon to a cutting board and cut into wedges, discard the rind.

  5. Place watermelon wedges in the refrigerator until chilled.

  6. Arrange wedges on a plate. Sprinkle with mint and feta. Drizzle with oil and vinegar then sprinkle with sea salt and pepper,

Recipe Notes

I chose to keep the rind on, it makes it easier to pick up and eat without needing utensils.
