How to make a Watermelon “Cake”

Here is a healthy "cake" for your summer celebration.

Ingredients

  • 1 seedless watermelon
  • 1 lg tub Cool Whip Lite
  • 1 pineapple
  • 1 qt strawberries

Instructions

  1. Cut the ends off of the watermelon to make it flat on both ends.
  2. Carefully cut the rind off of the watermelon.
  3. Place a paper towel on a large plate. Set the watermelon on the paper towel and place in the freezer for 30-45 minutes.
  4. Remove the watermelon from the freezer and cover with Cool Whip Lite.
  5. After the watermelon is frosted, return it to the freezer for 30 minutes.
  6. While the Cool Whip is thickening in the freezer, cut up your pineapple and strawberries.
  7. Decorate your "cake" as desired. Slice like a regular cake and serve cold.
  8. Store the watermelon in the refrigerator.
