Ingredients

  • 3/4 cup shortening
  • 1 cup sugar divided
  • 1/2 tsp almond extract
  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup chopped fruit-flavored or spiced gumdrops
  • 2 large egg whites

Instructions

  1. In a large bowl, cream shortening and 3/4 cup sugar until light and fluffy. Beat in extract. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in gumdrops.
  2. In a small bowl beat egg whites until soft peaks form. Gradually add remaining sugar, beating until stiff peaks form, Fold into dough.
  3. Drop by heaping teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 12-15 minutes or until golden brown. Cool for 1 minutes before removing from pans to wire racks to cool completely.

Recipe Notes

I wrote the instructions exactly as they are in the cookbook. I, however, would have written them differently.
In step 1 you need 2 bowls, one for the shortening and sugar, and one for the dry ingredients.
In step 2 you use a 3rd bowl in which you whip the eggs and sugar. Make sure this 3rd bowl is clean and dry.
If you've never made soft peaks or stiff peaks with egg yolks, so what I did...Google search for videos before doing it on your own. My first attempt was a disaster.
