Nacho Casserole

Ingredients

  • 1 lb ground beef
  • 1 cup frozen corn thawed and drained
  • 2 cups tortilla chips slightly crushed
  • 2 cups shredded Monterey Jack Cheese
  • 12 oz chunky salsa mild or medium
  • 3/4 cup mayonnaise
  • 1 1/2 tbsp chili powder
  • seasoned salt to taste
  • black pepper to taste

Instructions

  1. Preheat the oven to 350° F.
  2. Spray a 2qt casserole dish with non-stick spray and set aside.
  3. In a large skillet over medium heat add the ground beef, chili powder, seasoned salt and black pepper.
  4. Brown the beef until fully cooked.
  5. Drain off the fat.
  6. Add the corn, mayonnaise, and salsa.
  7. Mix well.
  8. Layer the ingredients in the prepared casserole dish, distributing evenly as follows:
  9. Half of the meat.
  10. Half of the chips.
  11. Half of the cheese.
  12. Repeat with the remaining ingredients.
  13. Cover with aluminum foil.
  14. Place in oven and bake for 20 minutes.
  15. Serve with a dollop of sour cream

We also like to make this without the chips in it and use it as a dip!
