Crockpot Mashed Potatoes

I am in love with this very easy Crockpot Mashed Potatoes recipe. It is perfect for any night of the week, holidays, or to bring to a potluck.

Ingredients

  • 4 pounds Yukon Gold or Florida Gold Potatoes peeled and cut into 1" cubes
  • 2 cups Chicken Broth
  • 4 cloves Garlic minced or pressed
  • 1 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 tsp Dried Thyme
  • 1 tsp Dried Rosemary
  • 1 stick Unsalted Butter cubed
  • 8 oz Cream Cheese cubed and at room temperature
  • 1 cup Shredded Parmesan Cheese I like to add a little extra
  • 8 oz Sour Cream at room temperature

Instructions

  1. Spray 6 qt crockpot with nonstick cooking spray.

  2. Place potatoes, broth, garlic, spices, and butter into the crockpot and stir to combine.

  3. Cover and cook on LOW for 7-8 hours or HIGH for 3-4 hours, until the potatoes are tender.

  4. Once the potatoes are cooked, stir in the cream cheese, Parmesan cheese, and sour cream.

  5. Use a hand mixer to blend potatoes until desired texture has been reached. Serve and enjoy!
